Rice County is a United States county located in the United States of Minnesota. The county has a population of 56665 as per the 2000 census data. The county's estimated population as of July 2008 was 62390, It is 13th most populous county in Minnesota. It is spread over 516.13 square miles (1336.77 kmē), of which, 497.57 square miles (1288.7 kmē ) of it is land and 18.56 square miles (48.07 kmē) of it is water, giving it the 20th smallest by total area among Minnesota's county.

The population density was 113.9 people per square mile (43.98/kmē), giving it the 11th most densely populated county among the Minnesota. There were 20061 housing units at an average density of 40.3 per square mile (15.56/kmē). The average household size was 2.65 and the average family size was 3.14. In the county the population was distributed as follows: 25.3% under the age of 18, 15.8% from 18 to 24, 27.4% from 25 to 44, 20.2% from 45 to 64, and 11.4% who were 65 or older. For every 100 females there were 101.8 males. For every 100 females age 18 and over, there were 100.3 males. Its population was estimated at 62390 in July 2008, The racial or ethnic makeup of the county was 95.07% White, 1.66% Black or African American, 0.53% American Indian, 1.68% Asian, 0.13% Native Hawaiian, and 0.92% from two or more races.
