Interlachen Town is a town located in the Putnam County, Florida, United States. The town has a population of 1475 as per the 2000 census data. Its population in July 2008 was estimated to be about 1505, It is the 212th smallest by population in the U.S. state of Florida. The town has a total area of 6.45 square miles (16.71 square kilometre), of which, 5.81 square miles (15.05 square kilometre) of it is land and 0.65 square miles (1.68 square kilometre) of it is water, making it Florida's 275th largest by total area.

According to 2000 Census Bureau, there were 1475 people, 537 households, and 382 families residing in the town. The population density was 254.1 people per square mile (98.11/kmē), it is the 73rd least densely populated town in the U.S. state of Florida. There were 616 housing units at an average density of 106 per square mile (40.93/kmē). The average household size was 2.75 persons, and the average family size was 3.28 persons. In the town the population was distributed as follows: 30.9% under the age of 18, 7.5% from 18 to 24, 23.9% from 25 to 44, 22.9% from 45 to 64, and 14.8% who were 65 or older. For every 100 females there were 93.1 males. For every 100 females age 18 and over, there were 91.5 males. The median age of the town's population was 36.1 years, the median age of male residents at 35.9 and the median age of female residents at 36.3. The racial makeup of the town was 1157 White, 90 Black or African American, 13 American Indian, 4 Asian, Native Hawaiian, 46 from two or more races and 165 Ohter races.
